Thin-sliced beef marinated in a sweet soy-garlic-pear sauce and seared hot and fast — Korea's classic grilled beef.

- 1.5 lbbeef sirloin or ribeye (thinly sliced)
- 1/3 cupsoy sauce
- 3 tbspbrown sugar
- 1/2 Asian pear or apple (grated)
- 4 clovesgarlic (minced)
- 1 tspginger (grated)
- 2 tbspsesame oil
- 1/2 tspblack pepper
- 3 green onions (sliced)
- 1 tbspsesame seeds (toasted, to serve)
Instructions
- 1
Combine the soy sauce, brown sugar, grated pear, garlic, ginger, sesame oil, and black pepper in a bowl.
- 2
Add the sliced beef and toss to coat. Marinate at least 1 hour, or overnight in the fridge.
60:00 - 3
Heat a large skillet or grill pan over high heat. Cook the beef in batches, 1-2 minutes per side, until charred at the edges — don't crowd the pan.
02:00 - 4
Scatter with green onions and sesame seeds. Serve with rice and lettuce leaves for wrapping.
Notes
Slicing the beef thin is easiest if it's partially frozen (30 minutes in the freezer) first.

Korean BBQ Bulgogi Night
Marinate the bulgogi at least an hour ahead (or overnight) so the beef really takes on the sweet-savory flavor. Steam the rice and warm the kimchi while the beef sears hot and fast in batches — don't crowd the pan, or it steams instead of caramelizing.
