Instructions
- 1
THAWING (48-72 hours before): Leave leg in its bag, place on a sheet pan, put in the fridge immediately. Check after 48 hours — press the thickest part near the bone. If still hard in the center, submerge the bagged leg in cold water and change water every 30 minutes until fully thawed.
4320:00 - 2
MAKE BBQ SAUCE (night before): Combine ketchup, brown sugar, apple cider vinegar, Worcestershire, mustard, smoked paprika, garlic powder, onion powder, cayenne, and salt and pepper in a small saucepan. Simmer on low for 20 minutes, stirring occasionally, until it coats a spoon. Cool and refrigerate overnight. Makes about 2 cups.
20:00 - 3
PREP (night before, once fully thawed): Remove leg from bag and pat completely dry. Score the skin in a crosshatch pattern — cuts 2cm deep, 3cm apart, through skin and into the fat layer. Apply a thin layer of yellow mustard all over as a binder. Pack the dry rub on aggressively — every surface, into every score cut. Place back on sheet pan, leave uncovered in fridge overnight to dry the surface for better bark.
- 4
6:00 AM — Pull leg from fridge and let it sit on the counter for at least 1 hour while the oven preheats.
60:00 - 5
7:00 AM — Preheat oven to 160C / 325F. Place leg on a rack in a large roasting pan, skin side up. Pour 500ml water or beer into the bottom of the pan. Cover tightly with heavy foil and roast covered for 4 hours.
240:00 - 6
11:00 AM — Remove foil and increase oven to 180C / 350F. Roast uncovered for 1.5 to 2 more hours, basting with pan drippings every 40 minutes. Target internal temperature is 88-90C in the thickest part away from bone.
40:00 - 7
1:00 PM — Build a full bed of charcoal on the parrilla, edge to edge. You need even heat across the whole surface. Get coals to white ash on top and glowing red underneath — takes 30 to 45 minutes.
30:00 - 8
1:30 PM — Pull leg from oven and rest 15 minutes while parrilla reaches peak heat.
15:00 - 9
GRILL — PHASE 1: Place leg skin side down on the grate at its highest position. Leave for 10 minutes for slow fat rendering without burning.
10:00 - 10
GRILL — PHASE 2: Flip leg to skin side up and lower grate one notch to middle position. Brush BBQ sauce generously. Rotate and baste every 10-12 minutes for 30-35 minutes total. Have extra lit coals ready — open parrillas burn fast.
12:00 - 11
GRILL — PHASE 3: Lower grate to lowest position, place leg skin side down, and watch constantly for 3-5 minutes to blister and char the skin. Do not leave it unattended.
05:00 - 12
2:15 PM — Remove from grill and rest loosely tented with foil for 20-30 minutes. Do not skip this step. Carve and serve with extra BBQ sauce on the side.

Notes
Start thawing the leg 48-72 hours ahead in the fridge. Prep and rub the night before for best bark. Use a meat thermometer — target 88-90C in thickest part away from bone. On an open parrilla without a lid, grate height is your only temperature control — use it. Only apply BBQ sauce during the indirect/raised-grate phase, never directly over coals. Rest at least 20-30 minutes before carving. Pan drippings can be defatted and stirred into extra BBQ sauce.

Backyard BBQ Spread
The pork leg is the long pole, so build everything around it. Thaw it 2–3 days ahead and rub it the night before. Start its low-and-slow oven cook in the morning so it's ready to finish over charcoal at dinnertime — light the coals about 45 minutes before you carve. While the pork roasts, get the Cowboy Beans going: skim the rendered fat and dark drippings from the pork pan and use them to start the beans, then let them simmer for hours on the back of the stove (or the cool side of the grill). Save the cornbread for last — mix the batter while the pork rests after its charcoal finish, and bake it in a screaming-hot cast iron so it lands on the table fresh and steaming just as you carve. The chipotle hot sauce and garlic honey are both make-ahead condiments for the sauce bar — the honey needs at least a week fermenting on the counter, so start it early.
