Plátano Maduro en Gloria
Ripe plantains baked in a sweet, spiced syrup with cheese and a splash of cream — a warm, gooey Tico dessert (and sometimes side).
Ingredients
- 3 ripe plantains (sliced)
- 1/2 cuptapa dulce or brown sugar
- 1 cinnamon stick
- 1/2 cupwater
- 1 cupfresh cheese (crumbled)
- 1/4 cupcream or milk
- 2 tbspbutter
Instructions
- 1
Lightly fry or sauté the plantain slices in butter until golden.
- 2
Make a syrup: simmer the tapa dulce with the water and cinnamon until slightly thickened.
- 3
Layer the plantains in a baking dish with the crumbled cheese, pour the syrup over, and drizzle with cream.
- 4
Bake at 350°F (175°C) until bubbly and the cheese softens, about 20 minutes.
20:00 - 5
Serve warm, spooning the syrup over.
Notes
The sweet-salty contrast of caramelized plantain and fresh cheese is the magic. Use very ripe (black) plantains. Equally at home as a dessert or a rich side. Photo: Adobe Stock (#408018894), licensed.
