Rosquillas
Crunchy little corn-and-cheese rings, baked golden — a Guanacaste specialty enjoyed with coffee or agua dulce. Savory, cheesy, and addictive.
Ingredients
- 2 cupsmasa harina
- 2 cupsgrated hard cheese (such as aged Turrialba or cotija)
- 1/4 cupbutter (softened)
- 1 egg
- 1 tbspsugar
- warm water (as needed)
Instructions
- 1
Preheat the oven to 375°F (190°C) and line a baking sheet.
- 2
Mix the masa harina, grated cheese, butter, egg, and sugar, adding warm water a little at a time until a stiff, moldable dough forms.
- 3
Pinch off pieces, roll into ropes, and join the ends into small rings (rosquillas).
- 4
Arrange on the sheet and bake until golden and firm, about 25 to 30 minutes.
25:00 - 5
Cool — they crisp as they cool — and store in a tin. Serve with coffee or agua dulce.
Notes
A dry, salty aged cheese gives the best flavor and crunch; fresh cheese makes them too soft. They keep for days in an airtight container and travel well. A signature Guanacaste treat.
