Fresco de Cas
A tart, refreshing fruit drink made from cas — a small, sour tropical guava native to Costa Rica — blended with water and sugar. The most Tico of frescos.

Ingredients
4 srv
- 2 cupscas pulp (fresh or frozen)
- 4 cupswater
- 1/2 cupsugar (or to taste)
- ice (to serve)
Instructions
- 1
Blend the cas with the water just briefly — over-blending the seeds turns it bitter.
- 2
Strain through a sieve to remove the seeds and skins.
- 3
Stir in sugar to taste; cas is quite tart, so it needs a fair amount.
- 4
Serve cold over ice.
Notes
Cas is intensely sour — taste and sweeten generously. Blend gently and strain; crushing the seeds adds bitterness. Frozen cas pulp is widely sold and works year-round. A quintessential Tico refresher. Photo: Adobe Stock (#342711349), licensed.
