Agua Dulce
The quintessential Tico hot drink — tapa dulce (raw cane sugar) melted into hot water or milk, optionally with cinnamon. Comfort in a cup, poured at breakfast and on cool evenings across the country.
Ingredients
- 1 cuptapa dulce (panela) (chopped, or to taste)
- 4 cupswater
- 1 cinnamon stick (optional)
- milk (optional, to taste)
Instructions
- 1
Bring the water (with a cinnamon stick, if using) to a simmer in a pot.
- 2
Add the chopped tapa dulce (panela) and stir until it fully dissolves.
- 3
Simmer a few minutes to blend, tasting and adjusting with more water for lighter or more tapa for sweeter.
- 4
Serve hot as is, or whisk in a splash of warm milk for agua dulce con leche. Some add a squeeze of lime or a little coffee.
Notes
Tapa dulce is unrefined whole-cane sugar sold in solid cones or blocks — the backbone of countless Tico recipes and the original Costa Rican energy drink for farm work. Grate or chop it so it dissolves faster. Classic alongside a tortilla, gallo pinto, or a hunk of fresh cheese at breakfast. No photo yet — add your own.
