- 1 tspdried rubbed sage
- 1 mediumonion (chopped small)
- 1 Tminced garlic (or less if you prefer less garlic)
- 1-2 cupswater (if needed)
- to taste salt and fresh ground black pepper
Instructions
- 1
In heavy frying pan, heat 1 tsp olive oil, add ground beef and brown well, breaking into small pieces with turner, about ten minutes.
- 2
While the beef browns, combine chicken stock, beef stock, canned tomatoes with juice, sauerkraut with juice, sweetener, Worcestershire sauce, bay leaves, parsley and sage in a large stock pot. Bring to a low simmer.
- 3
When beef is well browned, add it to the soup pot. Deglaze the pan with a bit of the soup liquid, scraping off browned bits, and add to the soup.
- 4
Wipe out the frying pan and add the remaining 1-2 tsp olive oil. Saute onions 2-3 minutes until starting to soften, then add garlic and saute 1-2 minutes more.
03:00 - 5
Add the onions and garlic to the soup, reduce heat, and let soup simmer at low heat about one hour.
- 6
After an hour, taste for seasoning and add water if soup seems too strong. Simmer 15 minutes more if adding water.
15:00 - 7
Season to taste with fresh-ground black pepper (and a little salt if desired) before serving. Serve hot, with sour cream if desired.
Notes
Sauerkraut soup is about 6 net carbs per serving and 19 grams of protein. Sour cream is optional for serving. Kalyn Denny notes the soup was inspired by a recipe she saw somewhere but cannot remember where.
