Ingredients
- 1 cupbrown or green lentils
- 1 cuprice
- 3 onions (thinly sliced)
- 1 tspcumin
- 1/2 tspcinnamon
- 4 cupswater
- 1/4 cupolive oil
- salt (to taste)
- yogurt (to serve)
Instructions
- 1
Simmer the lentils in water until almost tender, about 20 minutes; drain, reserving the liquid.
20:00 - 2
Meanwhile, slowly fry the onions in olive oil until deep brown and sweet — this takes 15-20 patient minutes and is the soul of the dish.
- 3
Add the rice, cumin, cinnamon, the lentils, and water (use the reserved liquid). Cover and cook until the rice is done, about 18 minutes.
18:00 - 4
Fluff, fold in half the onions, pile the rest on top, and serve with a dollop of yogurt.
Notes
Lentils + whole grains = slow-digesting fiber that keeps blood sugar steady and supports heart health. The patience with the onions pays off — don't rush them. A squeeze of lemon and yogurt make it complete. Photo: Adobe Stock (#438954011), licensed.

Mezze Spread
A Middle Eastern table to graze across. The falafel batter starts with dried chickpeas soaked overnight, plan for that. Hummus and mujadara are both happy made ahead and served cool or at room temperature, so blend the hummus and cook the mujadara early. Get the shakshuka simmering on the stove while the falafel fries last so it's crunchy and hot straight out of the oil. Warm pita and lemon wedges all around. Bake the pita just before serving so it's warm, and make the tzatziki ahead. It's better once it's had time to chill.
